  • 8 whole Chicken Thighs
  • 1 Tablespoon Fresh Ground Black Pepper
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Kosher Salt
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Soy Sauce
  • FOR THE MANGO SALSA:
  • 1 whole Large Mango, Diced
  • 1/2 whole Large Sweet Onion, Diced
  • 1 Tablespoon Cilantro, Chopped
  • 1 whole Jalapeno, Seeded And Diced

Preheat oven to 400ºF.

Prepare chicken thighs by seasoning with pepper, garlic powder and salt on both sides. Set aside.

In a large skillet, heat oil, brown sugar and soy sauce over medium high heat. Once hot, add the chicken into the pan. Cook chicken thighs in the oil mixture for four to five minutes per side.

Place browned chicken thighs into a 9×13 baker and place in a 400ºF oven for 30 minutes or until thighs hit an internal temperature of 165ºF. They will be dark brown with a crisp skin.

While the chicken is baking, place all salsa ingredients into a small bowl and mix to combine.

Serve chicken over a platter of rice and top with mango salsa.
