Step 1
This method works with any size rolled or chunk beef roast. Season roast as you would for regular roasting. Put roast on a rack in a pan and put in preheated 375 degree oven for 1 hour. Don't peek or open oven door! Turn oven off. You may leave oven this way for up to 2 hours. Now turn back on to 300 degrees:
Rare: 45 minutes
Medium-rare: 50 minutes
Medium: 55 minutes.
Allow 10 minutes standing time on the counter top to set up. Remember throughout the whole process, don't peek or open the door!
