Lemon Muffins

This can be made into muffins or loaf breads.

Ingredients

  • For glaze:
  • 1 3/4 c flour
  • 3/4 c sugar
  • 1 t baking powder
  • 3/4 t baking soda
  • 1/4 t salt
  • 1 8oz lemon yogurt
  • 6 T butter (melted)
  • 1 egg
  • 1 T fresh lemon juice
  • 1/3 c fresh lemon juice
  • 1/4 c sugar

Preparation

Step 1

Preheat oven to 400 degrees.
Line muffin pan with paper baking cups.
Mix first 6 ingredients in a large bowl. Make well in center.
Whisk yogurt, butter, lemon juice and egg in another bowl.
Add wet ingredients to well in dry ones.
Stir until just blended (batter will be lumpy).
Spoon batter into prepared cups, filling each 3/4 full.
(If using loaf pans, grease and flour pans before filling with batter.)
Bake until muffins are golden brown and tester inserted in center comes out clean (~ 20 minutes).
Cool muffins for 5 minutes in pan.

Meanwhile prepare glaze:
Cook ingredients for glaze in small saucepan over low heat, swirling pan frequently, until sugar dissolves.
Remove muffins from pan.
Transfer to rack & pierce 6-8 holes in each.
Drizzle hot glaze over, coating tops well.
Serve at room temperature./
