Chicken with Mustard Marinade

Ingredients
- MUSTARD MARINADE
- 1/2 1/2 1/2 cup yellow mustard
- 1/2 1/2 1/2 cup honey
- 1 1 1 teaspoon veg oil
- 1/2 1/2 1/2 teaspoon lemon juice
- CHICKEN
- 4 4 4 boneless, skinless chicken breasts
- 1 1 1 tablespoon veg oil
- 1 1 1 teaspoon salt
- 8 8 8 slices bacon, cooked
- 1 1 1 teaspoon pepper(McCormicks peppercorn medley
- 2 2 2 cups shredded Monterey jack cheese

Preparation
Step 1
MARINADE
In a medium bowl, combine mustard, honey, oil and lemon juice. Using a wisk, mix about 30 econds until well mixed
Bacon
Place 8 pieces on a backing sheet lined with foil and bake for about 15 min at 425. When bacon is slightly crispy, remove and let cool
CHICKEN
1.place chicken in small baking dish, pour 2/3 of marinade over chicken. cover with plastic wrap. Refergirate for at least 2 hours
2.chill the remaining marinade
3.When ready to cook, preheat oven 375
4. Season chicken with salt/pepper
5.place oil in skillet on medium heat. Cook chicken in pan for 3-4 min per side until brown
6. turn heat off and remove skillet
7. brush each side with reserved marinade. save alittle for serving later
8.stack 2 pieces of bacon on each piece of chicken
9.spread 1/2 cup of cheese onto each piece of chicken
10. Back the skillet of chick for 5-7 min. until cheese is melted and chicken juices run clear
11. serve with extra marinade on the side
