Ingredients
- box of ready made stuffing mix or make your own:
- 4 haddock fillets: 1 filet of haddock per person
- 1 cup lobster: 1/4 cup of lobster per fillet (can use drained frozen canned lobster)
- 1 cup bread crumbs
- 1/4 cup butter
- 1/4 cup finely chopped onions
- Salt, pepper

Preparation
Step 1
Prepare stuffing mixture as directed on box or if making your own: melt butter and saute onions until soft. Mix butter and onion mixture with bread crumbs until moist, season with salt and pepper.
Lightly grease shallow pan with oil and arrange haddock fillets on sheet, top each fillet with 1/4 cup lobster.
Top lobster with 1/4 of the bread crumb mixture.
Bake in 350 degree oven for 20 minutes or until fish flakes easily with a fork.
Serve with rice.
