Ingredients
- ¼ pint of water
- 1 lemon rind
- 2 ½ lemons (juice)
- 1 cup of sugar
- 4 yolks
- ½ ounce of gelatin
- 4 tablespoons of cold water
- 4 egg whites
- ½ pint of double cream

Step 1
1. Place the yolks in cuisinart and process them for 30 seconds.
2. Combine water, sugar, and lemon rind and lemon juice in a saucepan.
3. Bring to a boil and boil for 5 minutes.
4. The machine on, pour the boiling syrup into the yolks. Process for 1 minute.
5. Soften the gelatin in the water and heat gently until melted.
6. Add the gelatin mixture to the yolk mixture and process for 2 seconds.
7. Pour the mixture into a bowl and chill for about 30 minutes.
8. Whip the whites until stiff.
9. Fold the cream and whites lightly into the soufflé base and turn the mixture into a flass serving bowl or individual dishes.
10. Chill the mousse for at least three hours before serving.
