  • 1 lemon rind
  • 2 ½ lemons (juice)
  • 1 cup of sugar
  • 4 yolks
  • ½ ounce of gelatin
  • 4 tablespoons of cold water
  • 4 egg whites
  • ½ pint of double cream

Step 1

1. Place the yolks in cuisinart and process them for 30 seconds.
2. Combine water, sugar, and lemon rind and lemon juice in a saucepan.
3. Bring to a boil and boil for 5 minutes.
