Preparation
Step 1
Combine the eggs and cottage cheese in a small bowl.
Heat a small non-stick frying pan over medium/low heat.
Spray with a little cooking spray like olive oil spray.
Add the mixture to the pan.
Cook for a few minutes, then slowly stir the eggs around with a wooden spoon.
Continue cooking until the eggs are cooked through.
Add salt and pepper.
Serve immediately.
