Banana Chocolate Chip Walnut Pancakes are so fluffy, soft and sweet that you might not need syrup! Except totally add syrup. Pancakes always make the perfect weekend breakfast.

Ingredients
- 1 1/2 1 1/2 1/2 very ripe bananas
- 1 1 1 large egg
- 1 1 1 teaspoon vanilla extract
- 1 1 1 cup skim milk
- 1/2 1/2 1/2 teaspoon white vinegar
- 2 2 2 tablespoons canola oil or melted butter
- 1 1/2 1 1/2 1/2 cups all purpose flour
- 1 1 1 tablespoon granulated sugar
- 1/2 1/2 1/2 teaspoon salt
- 2 2 2 teaspoons baking powder
- mini chocolate chips & chopped walnuts
- real maple syrup

Step 1
In a large bowl, mash ripe bananas well. Whisk in egg, vanilla, milk, vinegar and oil.
Add in flour, sugar, salt and baking powder. Whisk until batter is mostly smooth. (A few lumps are ok!)
Preheat a lightly greased nonstick skillet or griddle over medium-medium low heat. Using a 1/4 cup dry measure, pour batter onto hot skillet and spread into a 4-inch circle. Sprinkle mini chocolate chips and chopped walnuts onto the tops of the pancakes. Flip when bubbles start to form on the pancake surface and the bottom is golden brown.
Cook another minute or until bottom is also cooked. Remove from hot pan.
Repeat process until no more batter remains. Serve warm with sliced bananas, extra chocolate chips, walnuts and real maple syrup.
Yield 12 4-inch pancakes
*optional add in: 1/2 teaspoon ground cinnamon...its so good!!
