  • salt and pepper, for seasoning
  • 1 1 1 tbsp canola oil
  • 2 2 2 tbsp butter
  • 1 1 1 garlic clove, minced
  • 1/4 1/4 1/4 freshly squeezed lemon juice
  • 2 2 2 tbsp minced parsley leaves

Step 1

Pat scallops dry with paper towels, season with salt and pepper. Add canola oil to a large skillet set over medium-high heat and warm until almost smoking.

Place scallops in skillet and cook until browned on first side, 2-4 minutes. Flip and cook until second side is brown and the center is barely cooked through to a safe internal temperature of 145°, about 2 minutes. Transfer to a serving dish.

Melt butter in skillet. Add garlic and cook just until fragrant, about 30 seconds. Whisk in lemon juice and parsley. Pour sauce over scallops and serve immediately, refrigerating any leftovers.
