Pork Tenderloin For One 1 Picture

Ingredients

  • 1 1 to 1 1/2 pounds 1 1 to 1 1/2 pounds pork tenderloin
  • 1/2 teaspoon 1/2 teaspoon ground cumin
  • 1/2 teaspoon 1/2 teaspoon kosher salt
  • 1/4 teaspoon 1/4 teaspoon ground cardamom
  • 1/4 teaspoon 1/4 teaspoon garlic powder
  • 1/8 teaspoon 1/8 teaspoon chili powder
  • 1 tablespoon 1 tablespoon olive oil

Instructions
Place the skillet in the oven on a middle rack and heat the oven to 450 degrees F. The skillet will heat along with the oven.

Meanwhile, pat the pork tenderloin dry with a paper towel and set aside. Combine the cumin, salt, cardamom, garlic powder and chili powder in a small bowl. Rub the spice mixture onto all sides of the pork tenderloin.

Carefully remove the hot skillet from the oven using oven mitts and pour the oil in the pan. Swirl to coat the bottom of the pan.

Place the pork in the pan. (You can bend it to fit inside the pan if it's a little long). Return the pan to the oven. Roast for 10 minutes.


Using tongs, flip the pork tenderloin over. Reduce the oven temperature to 400 degrees F and continue roasting another 15 minutes. The pork is done when it's internal temperature registers 145 degrees in the thickest part of the meat.


Transfer the pork to a large plate and cover with foil. Let it rest 15 minutes before serving.
