Ingredients
- 10 10 10 oz fresh spinach
- 1 1 1 C parsley
- 1 1 1 C basil
- 1 1 1 C grated Parmesan
- 1 1 1 garlic clove
- 3-1/2 3-1/2 3-1/2 C whole milk
- 4 4 4 Tbl butter
- 1/3 1/3 1/3 C all purpose flour
- 12 12 12 oz grated cheddar cheese
- to salt and freshly ground pepper, to taste
- 1 1 1 lb elbow macaroni

Preparation
Step 1
Heat oven to broil.
In food processor, combine spinach, parsley, basil, parmesan and puree until chunky. Add 1/2 cup of milk and puree until smooth.
Melt butter in pan over med-high heat. Add flour and cook 2 minutes. Add remaining milk and stir until thick, 8-10 minutes. Stir in half of the cheddar cheese and stir until melted.
Meanwhile, cook pasta until al dente. Drain and stir into cheese sauce with the spinach and herb mixture. Stir until well combined.
Spread pasta in 9 x 13-inch pan and top with remaining cheese. Broil until golden brown and bubbly, 5-7 minutes. Let cool 10 minutes before serving.
Makes 6-8 servings.
