Zhoug (sauce for grilled meats)

A surprising chile kick makes the Yemenite sauce a great pairing for grilled meats. Pureeing the herbs and chiles with oil keeps the sauce bright green for several days.

Ingredients
- 1.5 1.5 1.5 C firmly packed fresh flat-leaf parsley leaves
- 1 1 1 C olive oil
- 3/4 3/4 3/4 C firmly packed fresh cilantro leaves
- 2 2 2 serrano chiles, stemmed
- 1.5 1.5 1.5 tsp kosher salt
- 1/2 1/2 1/2 tsp ground cumin

Step 1
Place all ingredients in a blender. Process until smooth, about 30 seconds. Cover and chill until ready to serve.
Makes 1.25 cups.
