Ingredients

  • 1 4-5 1 4-5 4-5 pound pork shoulder or butt
  • 2 2T. 2T. light brown sugar
  • 1 1 2 T. chili powder 2 t. paprika
  • 2 2 2 t. salt
  • 1 1 1 t. pepper
  • 1 1 1 t. dry mustard
  • 1 1 1 T. vegetable oil
  • 1 1/2 1 1/2 1/2 c. chicken stock or broth
  • 2 2 2 T. cider vinegar
  • 1 1 1 t. liquid smoke
  • 1 1(16 1(16 oz.)bottle prepared barbecue sauce
  • To pulled pork is traditionally smoked, doubling the amount of liquid smoke will help achieve that same smokehouse flavor. To go even more traditional, skip the last step and serve the pulled pork with sauce on the side.

Step 1

Cut pork into 2-inch thick slices
Combine brown sugar, chili powder, paprika, salt, pepper, and mustard to create a dry rub. Rub onto the surface of all cuts of pork.
With the cooker's lid off, heat oil on High or "brown," until sizzling. Place the rubbed pork in the cooker and brown on each side.
Add chicken broth, vinegar, and liquid smoke to the cooker, securely lock the pressure cooker's lid, and set for 100 minutes on HIGH.
Let the cooker's pressure release naturally 15 minutes before quick releasing any remaining pressure.
Using tong, remove pork from the cooker and then drain all liquid.
With the cooker's lid off, heat barbecue sauce on HIGH or "brown," until simmering, Pull or shred pork into the simmering sauce before serving.
