- nonstick cooking spray
- 2 2 2 cups finely crushed potato chips
- 3 3 3 lbs chicken drumsticks
- 1/4 1/4 1/4 cup mayonnaise
- 1/4 1/4 1/4 cup buttermilk
- 1/2 1/2 1/2 tsp cajun seasoning

Preheat oven to 400°. Line rimmed baking sheet with foil; spray generously with nonstick cooking spray. Put crushed chips in gallon zip-top bag.
Pat chicken dry. In large bowl, whisk mayonnaise, buttermilk and seasoning until smooth. Add drumsticks; toss to coat. One at a time, add drumsticks to bag and shake to coat with crumbs. Place on prepared sheet and bake until coating is golden brown and thermometer inserted in thickest part of drumstick reads 165°, 35-50 minutes (depending on size of drumsticks).
Serve immediately and refrigerate any leftovers.
