Ingredients
- 4 4 4 boneless chicken breasts, butterflied, pounded thinly
- 2 2 2 egg whites
- 1/2 1/2 1/2 cup flour
- 1 1 1 cup panko crumbs
- 1 zest of 1 lemon
- 1/2 1/2 1/2 tsp. dried thyme
- kosher salt
- fresh cracked black pepper
- olive oil, for frying
- lemon wedges for garnish

Preparation
Step 1
1. Prepare a baking sheet with paper towels, set aside.
2. Pound chicken thin by placing in a bag with a little water and pounding.Season chicken with salt and pepper.
3. Place egg whites in 1 bowl. Place flour seasoned with salt and pepper in another bowl. Place panko seasoned with salt,pepper,thyme, and lemon zest in a third bowl. Arrange bowls with flour first then eggs then panko.
4. Heat oil in a frying pan. When hot add breaded schnitzel. Fry for 2 minutes on each side. Garnish with lemon wedges.
