Penne Pasta with Spinach & Feta

Ingredients

  • 3 cups penne pasta
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, crushed
  • 1 cup marinated olives, chopped
  • 3 oz Feta cheese, crumbled
  • 2 tbsp capers

Preparation

Step 1

Cook pasta according to directions on box. Drain. Wash and drain spinach. Tear into pieces. In a large bowl, mix olive oil, balsamic vinegar, and garlic. Add warm pasta to olive oil mixture and coat well. Toss in olives, crumbled Feta, capers, and spinach. Mix well.
