Ingredients
- 1/2 1/2 1/2 cup plus flour
- 1/4 1/4 1/4 cup corn meal (optional)
- 1/3 1/3 1/3 cup sugar
- 1/2 1/2 1/2 teaspoon baking powder
- 1/8 1/8 1/8 teaspoon salt
- 3 3 3 tablespoons unsalted butter, at room temperature and cut into pieces
- 3-4 3-4 3-4 tablespoons buttermilk or soured milk
- 1 1 1 large egg
- 1 1 1 tablespoon grated lemon peel (optional)
- 1/2 1/2 1/2 teaspoon pure vanilla extract

Step 1
Preheat the oven to 350 degrees fahrenheit.
Grease a 4-inch cake pan and line it with parchment paper.
In a bowl, whisk together the cake flour, sugar, baking powder, and salt.
Add the butter and 2 tablespoons of the milk, and beat with an electric mixer on medium speed for about 1 minute.
Add the egg, vanilla, and remaining milk and beat on medium for an additional 30 seconds.
Scrape down the sides of the bowl and beat for an additional 20 seconds, until the mixture looks smooth and satiny.
Divide the batter between the 2 pans and bake for 20-25 minutes.
Cool on wire rack for 15 minutes.
Turn the cake out of the pan and cool completely.
