Hummingbird Cake

Ingredients

• Cake
• 3 cups flour
• 2 cups sugar
• 1 tsp salt
• 1 tsp soda
• 1 tsp cinnamon
• 3 eggs beaten
• 1 1/2 cups vegetable oil
• 1 1/2 tsp vanilla
• 1 8 oz can crushed pineapple undrained
• 2 cups chopped bananas
• 1 cups chopped pecans or walnuts
• Frosting
• 2 8 oz packages cream cheese
• 1 Cup Butter
• 2 16 oz packages powdered sugar
• 2 tsp vanilla

Preparation

Step 1

Cake
Combine 1st 5 ingredients
Add next 6 ingredients and stir till all ingredients are moist
Spoon into 3 9 inch cake pans that are well greased and floured
Bake @ 350 25-30 minutes
Cool 10 minutes
Remove from pans and cool completely

Frosting
Combine all ingredients
Spread frosting between layers and on top and sides of cake. Sprinkle with 1 cup chopped pecans or walnuts.
