Ingredients
- 1 * 1 onion, finely chopped
- 1 * 1 clove garlic, finely chopped
- 2 * 2 tablespoons butter
- 1 * 1 cup pearl barley
- 1/4 * 1/4 cup white wine
- 2 * 2 tablespoons lemon juice
- 2 1/2 * 2 1/2 cups chicken broth
- 2 * 2 sprigs fresh thyme
- * Grated zest of 1/2 lemon
- * Salt and pepper

Preparation
Step 1
1. In a saucepan, soften the onion and garlic in the butter. Add the barley and cook for 1 minute while stirring. Deglaze with the wine and the lemon juice. Reduce for 1 minute. Add the broth and thyme. Season with salt and pepper. Bring to a boil. Cover, reduce the heat and simmer, stirring frequently, until the barley is tender and all the liquid is absorbed, about 45 minutes. Remove the thyme sprigs. Add the lemon zest and adjust the seasoning.
