Ingredients

  • Crust/topping:
  • 1/2 1/2 1/2 cup granulated sugar
  • 1/2 1/2 1/2 tsp baking powder
  • 1-1/2 1-1/2 1-1/2 cups flour
  • 1/2 1/2 1/2 cup butter, cut into chunks
  • 1 1 1 egg, beaten
  • Filling:
  • 1/4 to 1/2 1/4 to 1/2 1/2 cup sugar, depending on tartness of fruit used
  • 2 2 2 tsp cornstarch
  • 1 1 1 cup fresh or frozen blueberries
  • 1 1 1 cup fresh or frozen raspberries
  • substitute any combo of berries you'd like

Step 1

Preheat oven to 375F. Lightly spray 9" square pan with cooking spray. In medium bowl, stir together 1/2 cup sugar, flour, baking powder. Using a food processor or Ninja, blend in butter chunks and egg until mixture resembles fine crumbs. Pat half of the mixture in bottom of pan.

In another bowl, toss together berries, cornstarch and sugar. Sprinkle berries evenly over crust.

Crumble the remaining crust/topping mixture over the fruit.

Bake 40-45 mins in 375 oven (I used convection bake for 40 mins) or until top is lightly browned and the filling is bubbly around the edges.

Cool completely before cutting into squares. Store in refrigerator.

NOTE: This recipe can be doubled and baked in a 13x9 pan. Adjust baking time accordingly.
