Yenny’s Potato Leek Soup

Ingredients

  • 3 leeks
  • 1 tbsp olive oil
  • 1 onion
  • 4 cups chicken or vegetable stock
  • 4 potatoes
  • 1 clove crushed garlic
  • salt & pepper to taste

Preparation

Step 1

Sautee carefully washed & sliced leeks and chopped onion in oil until soft. Add stock, peeled, quartered potatoes, garlic, salt & pepper. Cook 25 minutes covered. Blend in food processor or blender until creamy and smooth.
