Ingredients

  • 1 1 1 olive oil
  • 2 2 2 medium onions, chopped (I buy it ready chopped)
  • 2 2 2 garlic cloves - minced
  • 1/1 1/1/2 1/1/2 tsp dried oregano (I use more)
  • 1 1/2 1 1/2 1/2 tsp ground cumin (I use more)
  • 2 2 2 lbs ground turkey
  • 2 2 2 bay leaves
  • 3 3 to T chili powder ( or to taste)
  • 1 1 1 jalapeno pepper, seeded and minced
  • 1 1 1 sweet red bell pepper - chopped
  • 2 2 2 cans of roasted diced tomatoes
  • 2 2 2 cans canelli beans
  • 2 2 to cups of chicken stock or to just cover chili
  • to Mexican Three cheese to top chili
  • to and pepper to taste
  • Optional: dollop of sour cream or Greek plain yogurt

Preparation

Step 1

Heat oil in large stewing pot and add turkey meat to brown. Add garlic and onions and cook to soften. Add red pepper, jalapeno pepper, oregano, cumin, chili and bay leaves and stir to mix. Add beans (can drain or not) and chicken stock. Bring to boil and then to simmer for 10 minutes or more.

Serve in bowls with a sprinkling of cheese on top and/or sour cream or yogurt on top. Good with corn bread or corn chips.

If there are leftovers, can use to serve over turkey or chicken dogs the next evening.
