  • 1 cup 1 cup peeled, diced potatoes
  • 1/2 cup 1/2 cup finely chopped onions
  • 1 clove 1 clove garlic, minced
  • 1 (14-ounce) can 1 (14-ounce) can whole peeled tomatoes, dice and juice reserved
  • 1/2 teaspoon 1/2 teaspoon sugar
  • Sea salt and freshly ground black pepper
  • 4 cups 4 cups chicken broth, plus more as needed
  • 3/4 cup 3/4 cup finely chopped Savoy cabbage
  • 1 tablespoon 1 tablespoon chopped parsley

1. Heat olive oil in a large pot over low heat. Add bacon and sauté until fat renders and bacon is crisp at edges, 5 minutes. Add onions and garlic. Reduce heat to low and cook until onions are translucent and soft, about 10 minutes.

2. Add potatoes, tomatoes and their juice. Season with sugar, salt and pepper to taste. Add broth and bring to a boil over medium-high heat. Reduce heat to low and simmer 5 minutes.
