Ingredients
- 1/2 1/2 1/2 cup canned Pumpkin
- 2 2 2 Tbs. Maple Syrup
- 1/2-1 1/2-1 1/2-1 tsp. Cinnamon (to taste)
- 1/2-1 1/2-1 1/2-1 tsp Pumpkin Pie Spice
- 1/4 1/4 1/4 tsp salt (if not using salted nuts)
- 1/2 1/2 1/2 cup raw, unsalted Walnuts, chopped
- 1/2 1/2 1/2 cup raw unsalted Pumpkin Seeds (pepitas)
- 2 2 2 cups rolled GF Oats
- 2/3 2/3 2/3 cup dried cranberries

Preparation
Step 1
Preheat oven to 300F. Prepare a large rimmed baking sheet with parchment paper.
Stir pumpkin, maple syrup, cinnamon, and pumpkin pie spice to combine.
Mix, salt, nuts, seeds, and oats together. Add wet ingredients and stir to combine.
Spread mixture evenly in a single layer on the baking sheet, using 2 sheets if necessary.
Bake for about 40 minutes, checking every 10 minutes and stirring occasionally to break up any large clumps.
When granola is done, allow to cool completely and stir in the cranberries.
Store up to 1 week in an airtight container.
