Ingredients

  • 4 lg. potatoes (Bella and I used 6, and did a recipe & a half, so that gives you an idea of how much 4 might make)
  • ice-cold water
  • oil for frying
  • 1 tsp. salt
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground garam masala (you can make your own - lots of recipes on-line)

Step 1

Mix together the salt and spices. Peel potatoes and cut into thin slices, then cut slices into matchstick strips. Soak in ice-cold water, then drain and dry well on paper towels. Heat oil until very hot and fry the potato straws, a handful at a time, until they are very crisp and golden. Lift out of the oil with a perforated sppon and drain well on absorbent paper. When they are all fried, sprinkle with the salt and spices mix.
