Ingredients
- 55 roma tomatoes, diced
- 1small1 small red onion, diced
- 1small1 small jalapeño pepper, minced, seeded if desired for less heat
- 1/4cup1/4 cup fresh cilantro, finely chopped
- juice of 2-3 limes (to taste)
- splashsplash extra-virgin olive oil
- 11 garlic clove, minced
- sea salt to taste (Maldon flaked sea salt pictured)

Step 1
Combine all ingredients in a mixing bowl and store in an airtight container for up to 5 days. Eat with lots and lots of tacos.
