Ingredients
- 1large1 large lemon
- 44 eggs
- 1stick1 stick (8 oz.) melted butter
- 1t1 t pure vanilla
- 1 1/2C1 1/2 C sugar
- 11 unbaked pie crust

Preparation
Step 1
Preheat oven to 350.
Cut lemon into small chunks including rind. Remove seeds. In blender or processor blend together lemon chunks, eggs, butter, vanilla & sugar until mixture is smooth & creamy. Pour into unbaked piecrust. Bake 40 min. If crust becomes too brown, cover gently with foil.
Serve with a dollop of whipped cream
