  • 1 large 1 large lemon
  • 4 4 eggs
  • 1 stick 1 stick (8 oz.) melted butter
  • 1 t 1 t pure vanilla
  • 1 1/2 C 1 1/2 C sugar
  • 1 1 unbaked pie crust

Preparation

Step 1

Preheat oven to 350.
Cut lemon into small chunks including rind. Remove seeds. In blender or processor blend together lemon chunks, eggs, butter, vanilla & sugar until mixture is smooth & creamy. Pour into unbaked piecrust. Bake 40 min. If crust becomes too brown, cover gently with foil.
Serve with a dollop of whipped cream
