Ingredients
- 1/2 1/2 1/2 cup butter softened
- 1 1 1 cup sugar
- 2 2 2 eggs
- 1 1 2 cup ripe banana mashed (about 2 medium)
- 1/4 1/4 1/4 cup milk
- 1 1 1 tablespoon grated orange peel
- 1 1 1 teaspoon vanilla
- 1/2 1/2 1/2 teaspoon almond extract
- 2 2 2 cups flour
- 1 1 1 teaspoon baking soda
- 1/2 1/2 1/2 teaspoon salt
- 1 1 1 cup flaked coconut
- 1/2 1/2 1/2 cup nuts chopped
- 1/2 1/2 1/2 cup crushed pineapple

Preparation
Step 1
cream butter and sugar
add eggs, one at a time, beating well after each egg
beat in the bananas, milk, orange peel and extracts
combine flour, baking soda and salt, and add to the creamed mixture
stir just until moistened
fold in coconut, nuts and pineapple
pour into greased 9X5 loaf pan
bake at 350* for 1 hour and 20 minutes or until a cake tester inserted in the center ones out Clean
cool for 10 minutes
