Ingredients

  • 3/4 cup unsalted butter, slightly softenend to room temp
  • 3/4 cup granulated sugar
  • 1 large egg, at room temp
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 and 1/4 cups all purpose flour(spoon and level)
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Step 1

1. In a large bowl, beat the butter until creamy and smooth. Add sugar and beat on high speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides and bottom of bowl as needed
2. Add egg, vanilla and almond extract and beat on high until fully combined, about 2 minutes.
3. Scrape down sides and bottom of the bowl as needed.
4. Whisk the flour, baking powder and salt together in a medium bowl. Turn the mixer down to low and add about half of the flour mixture, beating until just barely combined.
5. divide dough until 2 equal parts. Roll each portion onto a piece of parchment paper about 1/4 inch thick. refrigerate at least 1 hour and up to one day.
6. Once dough is chilled, pre heat oven to 350. Roll dough and cut cookies.
7. bake 8-11 minutes until very lightly colored on top and around edges.
8. Allow to cool on baking sheet for 5 minutes and then transfer to wire cooling rack .
