This Mexican Bowl Recipe is a fun, delicious and healthy dinner idea! Serve everything buffet style so everyone can create their own bowl.

Ingredients
- Cilantro Lime Dressing:
- 1/2 1/2 1/2 cup fresh cilantro (a handful)
- 1 1 4 clove of garlic, cut into 4 pieces
- 1/4 1/4 1/4 cup olive oil
- 1 zest and juice from 1 lime
- 1/8 1/8 1/8 tsp salt
- fresh ground pepper
- Ground Beef:
- 1 1 1 lb ground beef
- 2 2 2 tbsp homemade taco seasoning
- 1/4 1/4 1/4 cup water
- Mexican Bowl:
- 1 1 1 cup sliced grape tomatoes
- 1 1 1 cup sliced purple cabbage
- 2 2 2 cups corn
- 1 1 1 can chickpeas or black beans
- 1/4 1/4 1/4 cup sliced red onion
- 1 1 1 bell pepper, sliced
- 1 1 1 sliced avocado
- lime wedges
- 1 1 2 – 2 cups cooked rice

Step 1
Cilantro Lime Dressing:
Add all of the dressing ingredients into a food processor (or use a hand blender), and pulse until all the ingredients are mixed well. Set aside.
Ground Beef:
In a skillet add the ground beef and cook until it is no longer pink. Then drain and return to the pan.
Add the taco seasoning and water, and simmer for a few minutes, until the water is gone.
Mexican Bowl:
Prepare all of the fresh ingredients and put them into their own serving bowls (buffet style).
Putting everything together:
Place out all of the bowls of prepared ingredients, and let everyone make their own Mexican bowl!
