Ingredients

  • 1 1 1 cup sugar
  • 3 3 3 tablespoons cornstarch
  • dash dash of salt
  • 1 1 1 cup whole milk
  • 3 3 3 eggs separated
  • 4 4 4 tablespoons BUTTER
  • 1 1 1 teaspoon shedded lemon peel
  • 1/4 1/4 1/4 cup freshly squeezed lemon juice
  • 1 1 1 cup sour cream
  • 1 1 9 BAKED 9 inch pie shell
  • MERINGUE
  • 1/4 1/4 1/4 teaspoon cream. of tartar
  • 1/2 1/2 1/2 teaspoon vanilla
  • 6 6 6 tablespoon sugar

Preparation

Step 1

combine sugar, cornstarch and salt in medium saucepan
stirring well to coat cornstarch with sugar
slowly stir in milk and cook over medium heat until mixture is boiling
and thickened
remove from heat and blend small amounts of hot mixture into 3 slightly eaten egg yolks to temper
reserve egg whites for meringue
return egg mixture to hot mixture and cook, stirring constantly for 2 minutes
remove from heat and add butter, lemon peel and lemon juice
cover and cool to room temperature then fold in sour cream
spoon into baked pie shell
FOR MERINGUE
heat oven to 350*
beat reserved 3 egg whites, cream of tartar and vanilla to soft peaks
gradually beat in sugar
beat to stiff pecks
spread merge on top of pie, taking it all the way to the edges
bake 12 to15 minutes or until lightly browned on top
refrigerate until serving time
