Ingredients

  • Crumb mixture:
  • 2 cups quick oats
  • 1 cup oat flour (quick oats ground in a blender)
  • 1 cup unsweetened shredded coconut
  • 1/2 cup raw almonds, ground
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil
  • 1/3 cup pineapple juice
  • Filling:
  • 1 14 oz can crushed pineapple
  • 2 cups dates, chopped

A few days ago, when my husband was suffering through the worst of his flu (after I had already begun to recuperate), I decided to cheer him up by making him one of his favourite treats, date squares! But since we are still sick and have decided to clean up our diet, I wanted a recipe that used only natural, healthy ingredients. I searched my recipes, and found this recipe in an old vegan cookbook. I tweaked the recipe more to my liking, and baked the most delicious vegan, no-sugar added date squares I've ever had...the ONLY vegan, no-sugar added date squares I've ever had :)

Crumb mixture:

1 cup oat flour (quick oats ground in a blender)

Combine oats, oat flour, shredded coconut, ground almonds and salt in a bowl. With a pastry blender, cut the coconut oil and pineapple juice into dry ingredients until mixture is crumbly.

Combine crushed pineapple and chopped dates in a small saucepan, and cook on medium until thick. Place mixture in blender, and blend until smooth.

To assemble: Press half of the crumb mixture into the bottom of a 7x11 baking pan. Spread filling evenly on top. Cover the filling with the remaining crumbs and press lightly, but firmly. Bake at 350 for 35 minutes. Allow squares to cool completely before cutting.
