Ingredients

  • FILLING:
  • 1 homemade 9” unbaked pie shell
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/8 teaspoon salt
  • 3 eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
  • 3 tablespoons Kentucky Bourbon
  • 1 cup toasted walnuts (toast in a 350° oven for 8-10 minutes)
  • 1 cup semi-sweet chocolate chips
  • TOPPING:
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tablespoon Kentucky Bourbon

Preparation

Step 1

Preheat the oven to 400°.

Blind bake the pie crust for 5 minutes.

Turn the oven down to 350°.

Beat the brown sugar, flour, salt, eggs, melted butter, vanilla, and bourbon on low speed until smooth (you don’t want foam).

Fold in the walnuts and chocolate chips.

Pour the mixture into the partially baked crust.

Bake pie for 40 minutes, or until the center is almost set (it will finish cooking as it cools).

Remove to cooling racks.

Just before serving, whip the cream to soft peaks.

Add the powdered sugar and beat to stiff peaks.

Stir in the bourbon and serve over the pie.
