Ingredients

  • 2 2 2 Tbsp EVOO
  • 4 4 4 ribs celery chopped
  • 2 2 2 onions chopped
  • 4 4 4 carrots chopped
  • 1 1 1 bay leaf
  • salt and pepper
  • 6 6 6 cups broth
  • 1 1 1 lb ground chicken
  • 1 1 1 egg
  • 1/2 1/2 1/2 cup Italian Bread crumbs
  • 1/2 1/2 1/2 cup freshly grated Parmesan
  • 2 2 2 cloves garlic chopped
  • 1.1 1.1 pkg 1.1 lb pkg gnocchi
  • 1 1 1 cup frozen peas
  • flat leaf parsley

Preparation

Step 1

In a soup bowl, heat the EVOO, 2 turns of the pan, over med-high heat, add the celery, onions, carrots and bay leaf, season with salt and pepper and cook 5 min. Stir in the broth, cover and bring to a boil.

Meanwhile, in a bowl, season the chicken with salt and pepper. Stir in egg, bread crumbs, cheese, garlic and nutmeg. Roll into meatballs. Add to the stoup. Simmer 10 minutes. Add the gnocchi to the stoup and simmer 5 minutes. Add the peas and parsley and cook for 2 minutes. Remove the stoup from heat, discard bay leaf and let sit 5 min before serving
