ANGEL HAIR PASTA WITH SHRIMP AND BASIL

Ingredients
- 1/4 1/4 1/4 c olive oil, divided
- 1 1 1 pkg basil angel hair pasta
- 1 1 1 t chopped garlic
- 1 1 1 # large strip, peeled, deveined
- 2 2 oz) cans 2 (28 oz) cans Italian-style diced tomatoes, drained
- 1/2 1/2 1/2 c dry white wine
- 14 14 14 c chopped fresh parsley
- 3 3 3 T chopped fresh basil
- 3 3 3 T freshly grated Parmesan cheese

Preparation
Step 1
1. Bring a large pot of water to a boil, and add 1 T oil and salt. Cook pasta in boiling water per pkg directions until el dente.
2. Heat the remains olive oil in a 10-inch skillet over medium heat. Cook garlic, stirring constantly, until tender, about 1 minute.
Do not let the garlic burn. Add the shrimp, and cook 3-5 minutes until partially cooked through. Remove the shrimp from the skillet, set aside.
3. Add the wine to the skillet, stirring to deglaze the pan. Add the tomatoes. Continue cooking, stirring occasionally, until any liquid is reduced by half, about 8-10 minutes.
4. Add the shrimp, parsley, and basil and continue cooking until the shrimp are heated through, about 2-3 minutes
5. Serve the shrimp mixture over the pasta. Sprinkle wth Parmesan cheese.
