Ingredients
- 1 onion, chopped
- 2 tsp vanilla
- 1 cup apple cider or apple juice
- 1 tsp liquid smoke (optional)
- 1/2 cup water
- 1 rack pork spareribs
- 1 1/2 tsp kosher salt or smoked salt
- 1 tsp black pepper
- 1 cup barbecue sauce

Prep
Place onion, vanilla, apple cider. liquid smoke, if using, and the watering the Instant Pot. Cut the rack of ribs into 3 or 4 portions so they fit in the pot. Season with salt and pepper and place in the pot. Secure the lid on the pot. Close the pressure-release valve.
Cook
Select Manual and cook at high pressure for 15 to 2o minutes. When cooking is complete, use a natural release to depressurize.
Place ribs on a baking sheet, Pour barbecue sauce over the ribs. Cook in the oven at 4oo degrees for 10 minutes, flipping halfway through. (You can also broil the ribs to finish cooking them on a grill.)
Tip: If finishing in the oven, use the liquid smoke and smoked salt.
Baby back ribs take 15 minutes and St Louis/spareribs take 2o minutes.
