Ingredients
- 3 cups white pastry flour
- 4 1/4 tsp baking powder
- 1 1/2 tsp salt
- 1/2 cup shortening
- 1/8 tsp soda
- 1 cup plus 2 Tbsp buttermilk
- 1/4 cup flour
- 1 egg white

Step 1
Preheat oven to 375 degrees F
Sift together the flour, baking powder and salt. Add shortening and mix at low speed of electric mixer until shortening is well broken up. Combine soda and buttermilk and add to flour mixture. Mix until all ingredients are well blended.
Place the dough on a floured board and roll out in rectangle, about 3/4 inch thick. Cut with 2-inch biscuit cutter dipped in flour. Place cut biscuits, touching each other, on lightly greased baking sheet. Brush tops of biscuits with egg white mixed with 1 tsp water. Bake for 15-18 minutes.
