Ingredients
- 1 1 1 bunch (6 oz.) of argula
- salt and pepper
- small small chicken cutlets (1/4 inch thick)
- parm cheese shaved

Preparation
Step 1
Divide arugula among 4 plates leaving center of each empty. Season chicken on both sides. Heat 1 tbs. oil in a large heavy skillet over med. high. Don't crowd. Cook until golden brown about 2 minutes. Flip and cook 2-3 minutes. Put on plates drizzle with oil, scatter with cheese and serve with lemon wedges.
