Ingredients

  • 1 tsp sesame oil
  • 1 1/2 lbs. skinless, boneless chicken breasts and/or thighs, cubed
  • 6 Tbs rice vinegar
  • 6 Tbs soy sauce
  • 1 clove garlic, chopped
  • 1/4 tsp ground ginger
  • 1/4 tsp crushed red pepper
  • 3/4 cup hoisin sauce
  • 4 Tbs brown sugar
  • 2 Tbs cornstarch
  • 2 cups cooked white rice
  • 1 green onion, chopped
  • Sesame seeds

Prep
Pour the Sesame oil in the Instant Pot. Select Saute and adjust to Normal. Add chicken to the pot. Cook and stir for 5 minutes or until chicken is white (does not need to be cooked all the way through. Press Cancel.
In a separate bowl mix together the rice vinegar, soy sauce, garlic, ginger, crushed red pepper, hoisin sauce, and brown sugar. Pour the mixture over the chicken in the pot. Secure the lid on the pot. Close the pressure-release valve.
Cook
Select Manual and cook at high pressure for 10 minutes. When cooking is complete, use quick release to depressurize. Press Cancel.
Select Saute and adjust to Normal. B ring to a slight boil. Whisk in the cornstarch until mixture turns thick and bubbly for about 2 minutes.
Press Cancel.
Serve the chicken over rice. Sprinkle with green onions and sesame seeds.
