  • 2/3 cup + 1 tbsp melted coconut oil, separated
  • 1/2 cup maple syrup
  • 1 bar (50 grams) dark chocolate, around 70%, broken into pieces
  • 2 1/4 cups (225 g) raw, thinly grated parsnips
  • 3 eggs
  • 1 tablespoon vanilla
  • 1 cup spelt flour
  • 1/2 cup + 2 tbsp almond flour, separated
  • 5 tbsp cacao powder
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg
  • pinch of sea salt
  • heaping 1/3 cup hazelnuts, toasted and chopped

Add the chocolate-parsnip mixture to the flour mixture and whisk until just incorporated.Pour batter into the prepared cake pan and bake for 20-25 minutes just until the top cracks.
