  • For Cake:
  • 2 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • Fro the Frosting:
  • 8 cups powdered sugar
  • 12 ounces milk chocolate, melted and cooled
  • 1/2 cup butter, softened
  • 1/4 cup milk
  • 1/4 cup stron brewed coffee, cooled
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt

Step 1

Make cake:
1. Preheat the oven to 350º. Grease, flour and parchment 2 9-inch round cake pans.
2. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in a large bowl. Make a well in the center of the dry ingredients and fill with the eggs, buttermilk, coffee, oil and vanilla. Beat with a mixer on medium speed until well combined; about 2 minutes. (Batter will be thin.). Pour into prepared pans.
3. Bake until a toothpick inserted into the center of the layers comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes, then carefully remove and transfer to wire racks to cool completely, about 2 hours.

Make Frosting:
1. Beat together 2 cups of the powdered sugar and the remaining frosting ingredients in a very large bowl until smooth. Beat in the remaining powdered sugar gradually until smooth, adding more milk or coffee if necessary to make spreadable.
2. Generously fill and frost the cooled cake.
