Ingredients
- 3 tablespoon olive oil
- 20 cloves garlic, minced
- 6 pounds bulk chorizo sausage
- 10 ribs celery, sliced
- 15 carrots, sliced
- 6 onions, diced
- 9 cup dried lentils
- 27 cups water
- 1 can tomato paste
- 3 teaspoon ground dried turmeric
- 3 teaspoon curry powder
- 9 teaspoon ground cumin
- 3 teaspoons ground coriander
- salt and pepper to taste

Step 1
Heat olive oil in a large saucepan over medium-high heat. Stir in garlic, and cook until it turns golden brown, about 45 seconds. Add the chorizo sausage; cook and stir until the sausage is crumbly and beginning to brown, about 4 minutes. Pour off excess grease from sausage. Stir in onion, celery, and carrots, cook until the vegetables soften, about 4 minutes more.
Add the lentils and water. Season with turmeric, curry powder, coriander and cumin. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the lentils are tender, about 40 minutes. Season to taste with salt and pepper before serving.
