- 1 tablespoon olive oil
- 2 clove garlic, minced
- 2 teaspoons dried oregano
- 1/2 cup (vegetarian) parmesan
- 2 tablespoon fresh chives

Step 1
Slice red potatoes into roughly 1/4″ thick slices. In a large skillet, heat oil over medium heat. Add in garlic and potatoes and saute until potatoes begin to soften, Sprinkle in cheese and oregano and continue to cook until potatoes begin to brown on both sides, 15-25 minutes (depends on the thickness!). Remove from heat and serve warm.
