Ingredients

  • 1 cup unflavored gelatin
  • 1 cup sugar
  • 1/4 tsp salt
  • 4 eggs, separated
  • 1/2 cup lime juice
  • 1 tsp grated lime peel
  • 1/3 cup tequila
  • 3 Tbsp triple sec liqueur
  • 1 (9 inch) baked pastry shell

Preparation

Step 1

Mix gelatin, 1/2 cup sugar, and salt in saucepan. Beat egg yolks and lime juice together and add to gelatin mixture. Cook, stirring, over low heat until gelatin is dissolved, 5-7 minutes.

Remove from heat and stir in lime peel, tequila and liqueur. Chill over ice water or in refrigerator until mixture mounds slightly when dropped from a spoon.

Beat egg whites and remaining 1/2 cup sugar until stiff. Fold whites into gelatin mixture. Turn filling into pastry shell and chill until firm. Garnish with lime twists and whipped cream dollops, if desired

For best results, serve pie the same day
