Ingredients
- 1 8 ounce package cream cheese, softened
- 1 94-ounce package crumbled blue cheese
- 1 cup loosely packed spinach leaves
- 3/4 cup loosely packed italian parsley leaves
- 1/4 cup loosely packed basil leaves
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup chopped pine nuts
- 1 cup freshly grated
- parmesan cheese
- 1/2 cup dried tomatoes in oil, sliced

Step 1
Garnishes: fresh basil sprigs, cherry tomato wedge.
Process cream cheese and blue cheese in a food processor until smooth. Spoon into a small bowl, and set aside. Process spinach and next 4 ingredients in food processor. With processor running; pour oil through food chute in a slow, steady stream. Stir in pine nuts and parmesan cheese. Line a 7 1/2" x 3" loaf pan with plastic wrap, allowing edges to overhang. Spread half of cheese mixture in loaf pan; top with half of tomato. Spread with spinach mixture; top with remaining tomato mixture. Cover with plastic wrap; chill 24 hours. Let stand at room temperature 30 min.
