Ingredients

  • 8 med. yellow squash
  • 2 Tbsp unsalted butter
  • 1 onion chopped
  • 1 c. Half & Half
  • 1 tsp. Worcestershire sauce
  • 1 Tbsp sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. shredded Cheddar cheese
  • 4 slices bacon cooked
  • 1 1/2 c. cracker crumbs

Preparation

Step 1

Oven 300 - 40-50 mins.

Preheat oven. Peel, slice and cook squash. Saute onion in butter. Place squash and onion in blender to puree. In a bowl, mix eggs, Half & Half, Worcestershire Sauce, salt, pepper & sugar (or Splenda). Add to puree and stir well. Stir in grated cheese and crumbled bacon.

Grease shallow casserole, pour in puree and top with cracker crumbs.
