Ingredients
- 1/4 cup vegetable oil
- 1 cup chopped onions
- 5 cloves garlic, minced
- 1/3 cup flour
- 1 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 3 pounds lean pork cut in 1-inch cubes
- 2 cups apple-juice
- 2 teaspoon dijon mustard
- 1 tablespoon cider vinegar
- 3 cups thickly sliced apples, peeled
- 2 cups chopped rutabaga or carrot cut in 1/2-inch cubes

Step 1
In a large pot heat 1 tablespoon of the oil; add onions and garlic. Fry over low heat for about 5 minutes or until the onions are tender. Remove with a slotted spoon and set aside. In a sturdy bag, mix together the flour, salt and pepper. Add the pork in batches and shake to cool. Add 1 tablespoon oil to the pan; cook pork, one layer at a time, over medium-high heat until browned, adding remaining oil as necessary. Remove with a slotted spoon and set aside. Pour the apple juice into the pan; increases heat to high and scrape up bits from the bottom of the pan. Return meat and onions to the pan
