Ingredients
- 2 tablespoons olive oil
- 2 large yellow onions (peeled and thinly sliced)
- all purpose flour (for dusting)
- 1 sheet puff pastry (thawed)
- 1/2 cup Dijon mustard (plus more for serving)
- 9 Frankfurters
- 1 large egg (beaten)
- sesame seeds (for garnish)

Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
In a large saute pan, heat the oil over medium heat and add the onions. Cook stirring occasionally until caramelized, 25-30 minutes. Remove from heat and set aside until ready to use.
On a lightly floured work surface, roll out the puff pastry into a 12-inch square. Cut into 9 (4-inch) squares. Brush each square with some Dijon mustard, top with some caramelized onions and place a frankfurter in the center. Roll up the puff pastry making sure to press at the seams to seal. Brush the tops with egg wash, sprinkle with sesame seeds and cut on a bias into 4 pieces. Place seam side down, spacing 1-inch apart, on a baking sheet and freeze until solid, about 2 hours.
Remove from the freezer and bake until golden brown and puffed about 20-25 minutes. Serve immediately with additional mustard.
