Preparation
Step 1
Preheat oven to 400.
Slice carrots into fry-sized pieces. Toss with enough olive oil to lightly coat, and add a generous amount of freshly grated parmesan cheese, salt and pepper. Bake on a large baking sheet for 20-25 minutes, tossing halfway through.
Before serving, add a sprinkle of sea salt and chopped, fresh parsley,
Serve with mayo spiced up with a squeeze of Sriracha and a little lime juice.
