Ingredients

  • 1/2 small baguette (about 12 inch)
  • 1 large garlic clove mashed
  • Olive oil
  • 6 medium to large tomatoes cut into chunks
  • 1/2 medium onion chopped
  • 3 t. Coarsely chopped fresh basil
  • 1/4 c. Balsamic vinegar
  • 1/2 c. Olive oil

Preparation

Step 1

Preheat oven to 300 degree. Split baguette in half length wise. Rub one inside half with crushed garlic. Brush liberally with olive oil. Cut in half again and then cut these strips crust side down. Bake until dark golden about 30 minutes. Place tomatoes in a bowl for a while with basil and onions. Add croutons. Whisk together and vinegar and oil. Pour over salad and toss.
